6 Breakfast Recipes for any day of the week

The past week has been very busy, from pitches to day long road trips. This meant that I really haven’t had the time to make any new recipes. However, there are recipes on the blog that would love for some of your attention! Here are 6 recipe for every day of the week from the stressful busy mornings to when you want to brunch in style!

1. Cold Brew

While it isn’t a meal, it sure is a great caffeine supplement for days that you’re really running late. Cold brew coffee is perhaps one of the best ways to have coffee because the slow soak of light beans seep out all that coffee goodness and tease out all those nuanced flavours that artisan coffee beans always talk about! 2. Quinoa Oatmeal Granola

A super easy recipe that requires a 10 minute prep and an hour of roasting under a glaze of either honey or maple syrup. My recipe is vegan and uses coconut oil which can be switched out for veggie oil with the same amount. Quinoa is my favorite grain but I would use amaranth, oats, or millet to get that perfect mix of protein, carb, and fat. Serve with a nice serving of yogurt or milk. Get the recipe here.

3. Gluten Free Oatmeal Fig Pancakes

This is one of the oldest recipe on the blog but one that doesn’t disappoint. The oatmeal makes it both crunchy on the outside and chewy on the inside. Plus if you top it up with some yogurt, fruit, maple syrup— you literally would never want to have any other brekkie every again. Click here for the recipe!

4. Spanish Red Pepper Breakfast Casserole

Think of this as a simpler, yummier, and a lot more flavorful shakshuka. I made this red pepper roasted spicy puree with caramelised onions, soaked in wholewheat bread and slow baked until the puree cooks completely and then garnished with three oven fried eggs. It was amazing with whole garlic and roasted red poblano peppers. Each bite had a complex and diverse flavor based on what elements of the dish you ate and the eat was unique because unlike regular green chillies that hit the front of your mouth, this had a very latent expression which came after the sweetness of the red peppers and onions had already been introduced. 5. Hangover Eggs

As you go make a booze run tonight, don’t forget onions, potatoes, and a couple of eggs for the best hangover cure there is. Honestly, this is one my favorite things to make for breakfast regardless of my sobriety mainly because its flavors remind me of home. Sunday was traditionally the day I would talk to my parents at length, do laundry, and just decompress from the week and get ready for the next. 6. Eggs Kejriwal

These are basically fancy yet not no fancy toastie that can be crafted to be bougie or as basic as it can be. Use any bread, cheese, chilli, and top it up with a delicious fried egg. But, if you really really want to fall in love with this, I suggest investing in some good quality sourdough and a mild cheddar!

Ingredients

1 red onion chopped

1 green chilli

2 medium eggs

75 grams of cheddar or any other melty cheese

1 tablespoon of english mustard

1 tablespoon of butter

2 slices of a sandwich bread. I used sourdough

Method

  1. Preheat your broiler at 220 Celsius and toast your bread in a buttered skillet on medium low heat. You’re looking for an even browning making it easy for the filling to melt without breaking the bread. 

  2. To the un-toasted side add a teaspoon of mustard (I love whole grain but yellow just looked so so good!).

  3. Mix cheese, coriander, cheese, chilli well in a bowl and then divide generously between your slices.

  4. Place the toasts under the broiler until the cheese melts and turn brown, 7-10 minutes 

  5. In the same pan as the bread was toasted on, crack an egg and cook sunny side up. Add salt and pepper. If you want to cook the yolk a little, add drops of water and cover to cook by steam. 

  6. Assemble and you’re sorted!
