Mango Paneer Stir Fry
It's that time of year again when mangoes flood the markets, tempting us with their sweet aroma and vibrant colors. While we all love indulging in the classic mango desserts and drinks, I believe it's time to explore the savory side of this beloved fruit. Enter the Mango Paneer Stir Fry, a dish that celebrates the mango's versatility and brings a delightful twist to your regular stir fry routine.

Ingredients
1/3 cup soy sauce
1/2 tbsp honey
1 tsp sesame oil
1 tbsp water
1 tsp garlic powder
1 tbsp cornflour
250 grams of paneer
100 grams of green beans
1 whole pepper (capsicum), cubed or sliced
Method
In a bowl, whisk together soy sauce, honey, sesame oil, water, garlic powder, and cornflour to make the sauce. Set aside.
Prepare the veggies by chopping the french beans and blanching them (plunging in boiling water, then cooling in ice water).
Peel and cube the mangoes.
Chop the paneer and cook it with some red chili powder until it turns a nice golden color.
In a wok or large skillet, heat some oil and cook off garlic and ginger on high heat.
Add the blanched beans and your choice of veggies (I used a mix of peppers).
Toss in the cubed mangoes and give the pan a perfect chef stir fry flick.
Add the cooked paneer and pour in the prepared sauce.
Stir well and let the sauce thicken and coat all the ingredients.
Serve hot and enjoy your Mango Paneer Stir Fry!
