Miso Maple Sweet Potatoes
There's never a bad time to enjoy sweet potatoes. Whether it’s a cozy dinner for one or a gathering with friends, these root veggies bring warmth and satisfaction to any table. But if you ask me, the best way to savor sweet potatoes is by transforming them into something truly special—Miso Maple Sweet Potatoes. This recipe blends the earthy sweetness of sweet potatoes with the rich, savory flavors of miso and maple syrup, creating a dish that's both comforting and irresistibly delicious.
Ingredients
2 large sweet potatoes, chopped into rough rounds
2 tablespoons miso paste
2 tablespoons maple syrup
2 tablespoons warm water
2 cloves garlic, minced
Greek yogurt for plating
Method
Prep the Sweet Potatoes: Start by chopping your sweet potatoes into rough rounds. They don’t have to be perfect—just rustic enough to hold their shape but still cook evenly.
Sauté to Perfection: Heat a pan over medium heat and add a little oil. Once the oil is hot, place the sweet potato rounds in the pan, allowing them to get some nice color on both sides. This step is crucial for locking in flavor and giving the potatoes a slight crispiness.
Make the Miso Maple Mix: While the potatoes are getting their color, mix together the miso paste, maple syrup, and warm water in a bowl. Stir until the miso dissolves, creating a smooth sauce. This blend of savory and sweet will elevate the humble sweet potato to new heights.
Combine and Bake: Once the sweet potatoes have a good sear, pour the miso maple mix over them in the pan. Add in the minced garlic, making sure it’s evenly distributed. Transfer the pan to a preheated oven and bake at 180°C (350°F) for about 20 minutes. The potatoes will become tender, absorbing all the flavors, and developing a melt-in-your-mouth texture.
Plate and Serve: To serve, spread a generous dollop of Greek yogurt on a plate as the base. Place the miso fondant sweet potatoes on top, allowing the creamy yogurt to contrast with the rich, caramelized potatoes. The result is a dish that’s as beautiful as it is delicious.
Enjoy! As always, happy cooking!
