Sweet Oatmeal Bowls 4 Ways

I love oatmeal. The texture, the flavour, and the versatility of the ingredient! My favourite cookie is the oatmeal raisin too! Now, this blog comes after Diwali— the most sinful time for the calorie conscious. While none of these recipes is calorie deficient, it’s healthy enough for you to get transition into some healthier meals— until New Year’s comes around haha. So lets make some oatmeal bowls!


Vegan Apple Pie Oatmeal

This was the first oatmeal bowl that I made during the pandemic and the way that this recipe came out was amazing. It takes 10 mins to make and 2 minutes to ask for another helping!

Ingredients

3/4 cup rolled oats

1 tablespoon honey

2 teaspoons cinnamon powder

1 teaspoon ground ginger

1 large apple, cubed

1.5 cups water

Method

  • Add cubed apples to a saucepan on medium. Add honey, ground ginger, and cinnamon, and let the apples sweat

  • Then add water, and oats and cook them down until the oats soak up all the water and reach a nice porridge-like consistency

  • I love to serve it with some shaved dark chocolate and a dusting of cocoa. Enjoy!


Pumpkin Spice Oats

This recipe comes from a request from Natasha who wanted to make something with Pumpkin Spice. Fun fact: A PSL has no pumpkins in it. Spoiler: It’s pretty much the flavour of allspice (its like a clove and star anise had a child). Other than the spice mix, the other fun flair that we built on was whipped cream on top— mimicking the classic Starbucks PSL in every way. Its as Natasha calls it “The bomb-dot-com”

Ingredients

For the Pumpkin Spice Latte (makes a 4-5 servings of spice mix)

1/2 teaspoon allspice

1/4 teaspoon nutmeg

1/4 teaspoon ginger powder

1/2 teaspoon cinnamon

1/4 teaspoon clove powder

Everything else

1 shot espresso

1/2 cup yoghurt

2/3 cup oats

1/4 cup chia seeds

1 tablespoon honey

1 tablespoon whipped cream (optional)

Method

  • Start by taking all your spices and blitz them down to make a nice little powder

  • In a bowl add all the ingredients (other than the whipped cream) and 2 teaspoons of pumpkin spice and mix well. Cover and let it sit for a couple of hours or overnight

  • Garnish with some whipped cream, honey, and pumpkin spice.


Blueberry Baked Oats

The genesis of the recipe was basically me trying to figure out what to do with some blueberry compote I made. Sidenote: my two ingredient mousse goes AMAZING with some compote. The concept is to build a super easy blended oats recipe and place half of the contents in a ramekin and place a spoonful of compote followed by the remaining mix. Topping it with blueberries, and some coarse sugar and then off it goes to bake! I wish that the compote didn’t spread as much (perhaps it would have done better if I had frozen the compote) but it tastes so good!

Ingredients

For blueberry compote (makes a batch that will last months if refrigerated)

250 grams of frozen or fresh blueberries

15 ml of lemon juice

Zest of lemon

For the blender recipe

1.5 cups oats

2 bananas

2 eggs

1 tbsp honey

1 tsp baking powder

1 tsp vanilla extract

1/4 tsp salt

1/3 cup of milk

Blueberries for garnish

Cooking spray/oil

Method

  • For the compote: Bring all ingredients to a boil in a large heavy saucepan; reduce heat to medium-low. Simmer until blueberries are softened and start to release juices, about 10 minutes.

  • Using a slotted spoon, transfer the blueberries to a medium heatproof bowl. Simmer juices until thick enough to coat the back of a spoon, 15–20 minutes. Pour reduced syrup over the blueberries. Let cool.

  • For the oatmeal: Add everything other than the compote and berries into a blender to create one homogeneous mix

  • In a well-greased ramekin or baking pan, pour in half of the mix, add a spoonful of compote, and the remaining mix. Top with coarse sugar and blueberries and bake it in an oven at 180 degrees celsius for 20-25 minutes

  • Let it cool and enjoy!


Apple Crumble Oatmeal

I have always wanted to make an apple crumble. The moment you sauté apples, they turn sweeter and have the texture of a raisin (I LOVE raisins!). The concept for this dish is to just cook off the crumble and then make easy overnight oats with it. The one technique that I use is to add some grated apples into the mix. This adds so much natural apple flavour that it makes it feel as though you are literally eating an apple!

Ingredients

For the crumble

1 tablespoon oats

1 tablespoon almonds, chopped

1/2 apple, diced

1 pinch of cinnamon

For the oatmeal

2 green apples, grated

1 teaspoon cinnamon

1/2 cup yoghurt

2 tablespoons honey

1 tablespoon raisins

1 cup of oats

Method

  • Start by grating your apple into a bowl

  • In the same bowl add all the ingredients part of the oatmeal mix. Let rest for 15 minutes until the oats soak up flavour and get a little

  • In the meanwhile, in a non-stick pan, on medium heat, add a knob of butter and cook off all of the ingredients part of the crumble. Keep shaking to get an even colour and texture. About 5-8 minutes and you are done!
