Vegan Apple Pie Oatmeal

October has come and gone. I say that for every month but October is strangely very special. Its not only festival season but also a time when the family is all over you. This year, all of that changed drastically. While we did see the extended family exponentially so than any other time through the year, the “specialness” of the month seemed scant. There isn’t much that we can do. Celebrations have been pushed back (some indefinitely) while the earth is still rotating upon its axis at the same speed. This was the first month that I felt both busy but also retrospectively disappointed as to how the year has panned out. The cooking soothed the latter for sure but here are some highs and lows from the month

Highs

  • Natasha came back from Goa! We had planned for a long work-cation to Goa which came to a screeching halt when her mom god COVID (asymptomatic thankfully). So while I flew back within days of reaching the coastal city (without seeing the beach), she stayed on and took care of the house and family. They spent their mandatory home quarantine though the month and I’m so glad to have my bestie back home.

  • We hosted our first bake sale! In an effort to build a greater brand affinity and to understand just how difficult the foodservice industry is, Natasha and I decided to sell fudgy brownies through Delhi NCR. We got some great response and to be honest, other than the manual labour, the execution of it was flawless. It’s funny how Natasha and I find ourselves making large volume baked goods at least twice a year. There seems to be a theme here. Something I am excited to explore as we move on to 2021 (come here already!)

Lows

  • Migraines! I have never actually gotten migraines before but they seemed to a guest that popped up every other day. Maybe its the eyesight or the overuse of monitors (probably both). If you have tips for migraine cures let me know in the comments!

  • October last year I was determined to begin studying for the GMAT. The goal was to be applying for an MBA this year but looking back, I am not even close. While there are so many successes to be proud of, I always feel conscious when it comes to education. I have always felt there is somewhere better out there to dwarf my success and the rat race always stresses me out.

Another addition to a series yummy apple meals is this super easy apple-pie inspired oatmeal. It takes 10 mins to make and 2 minutes to ask for another helping!

Ingredients

3/4 cup rolled oats

1 tablespoon honey

2 teaspoons cinnamon powder

1 teaspoon ground ginger

1 large apple, cubed

1.5 cups water

Method

  • Add cubed apples to a saucepan on medium. Add honey, ground ginger, and cinnamon, and let the apples sweat

  • Then add water, oats and cook them down until the oats soak up all the water and reach a nice porridge-like consistency

  • I love to serve it with some shaved dark chocolate and dusting of cocoa. Enjoy!
